Following on from the Fakewell Tart recipe that I posted earlier, I’ve been asked to share the recipe for the carrot cake. This is another cake I’ve been enjoying lately. It’s actually a great option for when you need to eat on the run. It’s really filling and packed with ingredients that are actually good for you. Yummy! Again, there’s no flour in this cake. The cake is zero on no count but I’ve asked Tor (coach from the South West) to work out the points for me.
