I’m so very focused on my weight loss journey at the moment. I’d win brownie points if there was a competition right now (and I’d even point the brownies!). I’d adapted another recipe (when I say I, it’s actually my best friend’s mother-in-law, but that makes for a very long sentence). This banana loaf is delicious and really hits the spot when you’re craving something sweet!
The Ingredients
My chosen sweetener is Xylitol because it’s natural and actually good for you. It is very poisonous to dogs though, so please be careful not to leave your cake laying around (ha, if I could leave cake laying around, I wouldn’t be at Weight Watchers!).
The Recipe
I blitz the porridge oats up to make them finer. I then add the other dry ingredients. I take them out and add the bananas into the blender.
Then I pop the eggs and vanilla in with them and blend it all together. You then combine all the ingredients together. It makes quite a wet cake mixture.
Pour it in the loaf tin and bake for 25 minutes. I know many of you aren’t in the UK but the conversions are easy enough to google. My oven temperate is 180 degrees.

Hi, what is ‘porridge oats’? I am guessing it is old fashioned oats?
Yes, I think they’re just called oats or rolled oats outside of the UK 🙂
How much oats in cup measurements? Bake at what temp? Set my oven at 180? How many cup cakes would it make? Would they be 1 sp?
