I have another recipe for you. This time, we’ve been baking an apple cake. I always crave something sweet after a meal. Got to love the sugar addiction. You can tweak the recipe to include a teaspoon of ginger to jazz it up a bit. I think a drizzle of choc shot would make this cake even more delicious, but I didn’t think of that until after.
The Recipe
Beans! Following on from the chocolate cake the other week, this one too is using beans for the base of the cake. I’m so surprised with how well they work when baking. I didn’t expect them to be so tasty! I ordered the white kidney beans from Amazon, but I’m pretty sure they’re just cannellini beans, which are far easier to find.

Once the beans are drained, rinsed and patted dry, the mixing begins.

Why are bananas pictured above, but none in the apple cake recipe?
There are bananas in the recipe : )
The cake is 1000 calories for each cake, so be mindful of this. Zero points doesn’t mean eat it all :). It’s great that it’s made from ‘zero points’ foods but zero points still have calories.
Very interested in the introduction of beans – I have a sensitive stomach and cannot eat beans regularly. Baked beans are off the menu for me. I wonder how I would get on with this recipe?
How long did you bake at 180? Mine was completely runny so I upped the temperature to 350 and watching it.
We use Celcius here so it’s 350F 🙂
